DIY Baby's First Ornament



Okay so i wont take credit this  concept. I saw this idea from a family who shared a photo from internet so it gave me an idea to put my baby's first hospital sock and tag. Of course, gotta have glitter on. So here it is, my baby's first Christmas ornament for her first Christmas....





......who just turned two months!

Yellow Nursery

As of today, I am currently overdue and waiting to be induced today. I don't know what's this baby's problem but it looks like she didn't want to come out until her room is done. 




After all the moving and waiting, our nursery finally came into completion.  As soon as I found out I was having a girl, I knew I wanted a yellow nursery.



I didn't want the traditional color of blue or pink . It was hard to find yellow girly nursery inspiration online because yellow is considered as neutral color. I know I am sweet (hah!) but I am really not a pink kind of girl. Pink is too feminine for me.  I don't mind my baby girl wearing pink but pink all over nursery wall would be too much. I picked yellow because it's bright, happy and playful and yellow reminds me of sunshine!







My mother in law and I finished this nursery in two weeks. I cannot say I recommend preparing for baby room this late but it actually worked out pretty well for me because shopping pushed me to do a lot of exercise.



What you see in this room is a product of clearance, thrift store finds, sales discounts, coupons and some of my husband's old baby stuff like blankets, toys and refinished toy box. 



I wish I can do something with the paint color, but since we are just renting, decals worked out pretty well!



It was a great bonding time for me and my mother in law. I am very happy she was here to help us out with everything with her designing expertise!

Sauteed Mung beans with Kale


Face it! I am not in Philippines anymore. I can't get my tropical greens at my neighbor's backyard whenever I want.

When bitter melon (ampalaya) leaves, malunggay (moringga plant), alukbati (malabar spinach) or pepper leaves aren't present at asian store around the area I must keep my options open to an alternative local produce in local super markets.

Today I would like to share a Filipino recipe called Ginisang Munggo with Kale (Sauteed Mung beans). If you are unfamiliar of this dish, it is more like in a form of soup. We eat it with a side of steamed white rice and fried mackerel. We treat it as a main dish.

This dish is cooked in different ways in different regions of Philippines. However, this recipe is going to be a mixed breed. Thank God for alternatives! Filipino food lovers, do not fret. When International food market is inconveniently accessible, use Kale as  substitute. This little piece of healthy ingredient not only tastes good but adds an amazing health benefit to your dish if you don't want yo eat it raw.

The ingredients are:

1 1/2 cup mung beans
5 oz pork
2 tbsp cooking oil
4 cloves of garlic
1 small onion
salt and pepper
1 tsp fish sauce (optional)
1 tablespoon mashed ginger
1 cup pork rinds
1 leaf of Kale
water (depending on desired consistency you can start with 2 1/2 cups of water)



directions:
1. Prep the beans first.

2 ways to soften mung beans
*soak in water of two hours
*boil in water it until it's cooked
= I boiled the mung beans until it's cooked for this recipe.

2. Salt the pork and let it sit for 5 minutes. When beans are done, pour cooking oil on frying pan, sear/brown the sides of whole chunk of pork. It doesn't have to be cooked all the way. Set aside.

+  searing or browning meat achieves Maillard reaction for desired flavor. In my theory, I didn't cut the pork into small cubes was because it overcooks the meat which makes it too chewy. 

3. Bring mung beans to a boil, then add garlic and onions and mashed ginger.

+ I chose not to sautee garlic and onions because it brings the stronger flavor of garlic and oinion, such strong aroma my pregnancy cannot tolerate.

4. Put the seared pork into mung bean mixture until it's pale pink in the inside. Bring out from, and let it sit before cutting into small chunks.

+ This way the moisture stays in so you can have a more tender cooked meat.

5. Add your salt and pepper and fish sauce (optional). Season it until you get the desired taste.

7. Turn off your stove and put crushed pork grinds and chopped kale.

**Serve it with steamed rice.

Makes 4 servings


I did not cook this dish the traditional way. I cooked it with what's available in my pantry and fridge and added a twist of changes to experiment a new taste like...

We don't usually put ginger in it. It turns out, ginger flavor complements kale and it gives more asian taste and heat to the dish. I didn't use tomatoes because the alkalinity tends to shorten the shelf life of the dish.

I put pork grinds for more salty fat flavor while pork is used for protein part of this dish.

This may not have achieved a true authentic taste of traditional ginisang munggo, I am happy and satisfied in this experiment and made my very own signature dish which my Midwestern hubby enjoyed immensely.

Easy Easter Activity Treat


Hello! I would like to share a very easy Easter activity for kids. 
I am a pre-school Sunday school teacher at our church. I give treats to my students as a reward for being actively well in class. I don't just hand them treats. I wanted them to make crafts out of treats that would remind them about the lesson we just shared.


I found a cross clipart from internet. I edited it and put text "Jesus, Paid our sins" and cut out an outline. We used double adhesive to glue chocolate coins which I bought from CVS pharmacy.

Kids can put it on the fridge. As they peel each chocolate, there is a hidden message on that empty cross that would remind them that Jesus paid our sins by dying on the cross and has  risen from death.

D.I.Y Natural Deodorizer

Since I became pregnant, strong smell hasn't been my friend. I hated the smell of onions, meat, frying grease and my most vicious enemy, cooked bacon. It was frustrating because I used to love it. Even now I am on my second trimester, the habit is starting to grow on me.
It affected my husband as well. Now, he has to schedule when he can eat bacon which he loves btw. I have tried every odor busting ways, like candles, oil scents, air freshener spray. Opening windows and turning on our apartment size vent would take 2 and a half days before the smell goes away. Actually, it doesn't really go away completely. Since I cook everyday, the smell of dinner from the night before just mix up and artificial air fresheners just cover the smell. Now on my pregnancy, even these artificial air freshener bothers me. Sometimes I was embarrassed to have friends over because of the smell.
I tried a couple of D.I.Y natural deodorizer, but it was too weak that it didn't even last an hour. So I saw this recipe and gave it a try.



All I needed were 2 ingredients. Baking Soda and Essential oil. I used Essential oil fragrance (lavender) from Michael's. You can find it at candle making supplies. You can used old recycled jars for containers and put cover it with doily for a cute touch, or if you are feeling lazy, just cheese cloth and a scrunchie will do. You can make as many as you want and it wont cost you that much! Shake it ever few hours. Your DIY deodorizer could last up to 2 months.

I have to say I am very impressed with the result! That night I made this, my husband had bacon! Of course it would not work instantly but I am so happy I don't have to wait days to have my house smell free!

Tapioca Oreo Pearl Shake

The first trimester of my pregnancy is taking my appetite on a roller coaster ride. Although, I wanted to throw up everything, but I had to make sure my stomach has something to digest since my body is at work twice as much. I want to nurture my baby eventhough the smell of some foods is killing me.

One of the joys of pregnancy is enjoying your food cravings while your hubby gets it for you even at 3 in the morning. However, one of the pitfall of knowing how to cook is, when I crave something, I make it happen. My usual problem was, most of the food I craved wasn't available here so I had to make my own.



I had a craving for Zagu. Zagu is a brand name for a Tapioca pearl shake I loved way back 10 or more so years ago when still I was still in Manila. I have used and tried different types of tapioca available here in U.S but none of them successfully comparable to this...Boba tapioca is available at Asian store. This tapioca is chewy, sweeter by itself and very easier to cook. And for the shake, just blend ice oreo cookies and milk.


SUCESS!

Not all stories have happy ending. After enjoying my zagu, my morning sickness kicked in and I threw up. Bummer.

Someone Special is Coming



I stared at it for the longest time. I remember it lasted about a few minutes. Now the two purple intersecting  lines made quite an impact that would change my life forever.

Maybe I was reading it incorrectly? Are those really two lines or it was actually just one because I can bearly see the other line. There was a hint of denial. I went to the store and got another one, but this time it will be for sure. I did it again and digitally confirmed, "Pregnant".

I felt my blood drained from my head. Everything stopped for a moment. I was dumbfounded then my thoughts ran like the speed of light. I have summed my baby's course of life from childbirth fast forward to adolescence. Then, my thoughts reverted to "what will become of me?".

When I found out we were having a baby, It wasn't like the movies when I'm over the moon. Tiny cute clothing's and flaunting my bump were my least concerned.

I am growing another human being whom in the future is capable of either hurting me or loving me unconditionally. This stranger would come in my life who potentially could take everything I have and or be my everything.

I only fell deeply in love once. I have sacrificed and loved my husband to the fullest. The fear of losing him eats me, so what more of my flesh and blood? My husband reminded me that this child is not our possession but only entrusted in our care to find its purpose to contribute for the benefit of reflecting God's glory.

I would like to introduce the hand behind this creative fashion jewelry. My friend Jan Peterson of Chic Gems is an amazing woman who designs her own high quality and just GORGEOUS fashion accessories.
Here is a sample of one of her creations. I got this set of necklaces when she held a special event/generous donation to our church Copper Mountain Assembly of God here in Tucson. It was a fund raising to benefit the ministries our church is supporting. The price asked was from the heart. All the proceeds went to the ministries.



She gave me a lessons on how start a jewelry business. She taught me lot but the most important lesson I learned was to put the Lord's kingdom all business and never count it as loss and the He will bless you and your business.

Peppermint Mallow Cream and Dresslily Giveaway!!!

....meanwhile at the Christmas clearance section at the grocery store, I found peppermint flavored marshmallows. Suddenly I remembered a recipe from one of the ladies at our church consists of jello, cream and marshmallows.




 I am not a marshmallow type of person. However, I like perppermint! It's a shame I was too busy shopping for Christmas stuff and never noticed that there is such as peppermint marshmallows. Oh well.

This recipe for the cream is very easy. Put peppermint marshmallow (amount of your choice) into a cup of whipping cream. Let it sit for a minute or two and whip it at speed two with a stand mixer. If you like chunks of marshmallows, put the marshmallows at you whip the cream. 


I sprinkled crushed peppermint candy to add a little crunch to the dessert.
