Thai Peanut Chicken Tenders

I wasn't thrilled with the idea of peanut butter on my rice but this dish changed my perspective on the possibility that the two could actually work together!

I learned this dish from my meal planner app called FoodOnMyTable and tried it immediately. It is super easy and super delicious. So delicious that I had dinner twice!! My hubby had it for midnight snack!

It is called

Thai Peanut Chicken Tenders

Ingredients
1 (pound) chicken tenders
1 (teaspoon) ground ginger
1/2 (cup) honey
1/2 (cup) creamy peanut butter
1/2 (teaspoon) cayenne pepper (optional)
1/2 (cup) green onions, chopped (optional)

Directions
Heat oil in large skillet over high heat and cook chicken until it is no longer pink, about 3-5 minutes. Reduce heat to low and add ginger, honey, peanut butter and cayenne pepper. Cook, stirring frequently, until sauce is bubbly and warm, 3-4 minutes. Serve topped with green onions.

Healthified Parmesen Chicken

I never get to have the habit of breakfast cereal in the morning. I came from a place where breakfast is mostly composed of fried left-over rice, fried eggs, pan grilled whole tomato and dried salted fish accompanied with a hot instant coffee.

Sad to say, my stubborn self does not follow my doctor's suggested daily fiber allowance. I love the fiber-one cereal but the cold milk with it still does not appeal to my tastebuds just yet.

So my fiber-one cereal is just sitting in the cupboard. I've got to do something with it before it gets old and stale.

I saw this recipe from the girl who ate everything.

I tried it at one. Its so easy but delicious. Great with any side dish of your choice

Mine doesn't look as appetizing as the picture above.


In my case, I made potato salad.


Sometimes I stuffed the chicken with mozzarella cheese but this time, i tried to strictly follow the recipe.

Although I made one simple begginer's mistake. I was too impatient for my my chicken to cook, I thought I'd slice the thick chicken halfway. Turns out its a bad idea because the moist escaped leaving the chicken dry.

Oh well. Live and learn

Very Easy Sweet and Sour Chicken

I've had  my lazy cooking days and today is one. Karen, my husband's cousin's wife (really not sure how to call her in shorter term) shared this recipe from Minute's site and I made this for tonight's dinner. I have tried making good chicken for my sweet and sour but I just couldn't perfect it. My kitchen becomes messy and greasy everytime I fry chickens. so I used frozen chicken nuggets instead. Not really a fan of frozen food, but this isn't bad for easy made asian food. I put fresh veggie in it so thats good. I think.
