White menudo...

...Is what i call it but it is actually mexican menudo. It may not be new to you but it was rad for me because it is totally different from our menudo in the Philippines.
So we asked the mexican waitress what really is menudo? With a few words and a little charade, she said menudo is made of shredded beef stomach or what we call "tuwalya". This mexican menudo has a clear soup with hominy (or what i call Binatog na Mais in tagalog). The soup is served with chopped cilantro, onion chives and squeeze of lime. A very simple dish with just a few ingredients compare to our menudo.
A filipino menudo could consist of 15 ingredients, plus, it's red.
I am not sure where the term menudo came from but i read that it might have came from latin word, which mean, small, thin, worthless, unwanted or tripe (stomach).
I feel i just found the origin of our dish!. I find it really interesting how one culture skipped to influenced the other. I do not know the history behind Filipino menudo. I think it rooted during the Spanish occupation of the Philippines that influenced many of our dishes today.
And yeah, filipinos don't eat with chopsticks. :)
